The milk to eggs ratio is higher than the European custard tart, giving it a stronger milk flavor and a much lighter texture. Its a delicious treat and very simple to make.

To Make this recipe, you will need the following:
Ingredients
Pastry
- 125g plain flour
- tsp baking powder
- pinch of salt
- 65g castor sugar
- 100g butter
- 1 large egg, beaten
Filling
- 750ml milk
- 80g butter
- 40g plain flour
- pinch of salt
- 4 extra large eggs, seperated
- 75g castor sugar
- 1 tsp vanilla essence
- ground cinamon to sprinkle over milk tart
Method
1. Preheat oven to 350 degrees F (180 degrees C). Lightly grease 2x23 cm pie plates
2. For Pastry: sift flour, baking powder and salt. Add sugar. Rub in butter. Add beaten egg, mix well and press dough into two greased 23 cm (9 in) pie plates.
3. For filling: heat milk in a heavy based sauce pan and add butter.
4. Sift flour and salt, add egg yolks and sugar and beat well.
5. Add some boiled milk to the egg mixture, stir and pour back into pan.
6. Boil for a few minutes until thick, stirring constantly, and remove from heat. Add vanilla essence.
7. Beat egg white until soft peaks form and hold lightly into the cooked mixture. Pour filling into cases and sprinkle cinnamon over the top.
